First day of our Spring mini-vacation! We stayed just outside of Gunnison in Almont at the Three Rivers Resort. No phones, internet or anything so I am posting all this after getting home. Here we are enjoying a beer on the porch of our cabin after arriving.

I went to the dentist today for a cleaning and check-up- everything was A-ok. Quick cleaning, hardly any scraping and they think I floss- awesome! Hydrogen peroxide is the key!

Happy Mother's Day!
We had Carl's Mom over for brunch. I made quiche, cranberry scones and fresh fruit. The quiche was very good and I will definitely make it again.

SPINACH AND FETA QUICHE

1 (10 oz.) pkg. frozen spinach, thawed
6 oz. feta cheese, crumbled
1/2 c. cottage cheese
6 green onions, sliced (tops too)
1 tbsp. olive oil
1 tsp. dry basil
1/2 tsp. pepper
1/4 tsp. garlic salt
4 eggs
1/2 c. milk

Prepare crust and bake, if desired. Can be made without crust. Squeeze moisture out of spinach, set aside.

Beat together or blend or food process feta cheese, cottage cheese, green onions, oil, basil, pepper and garlic salt until smooth. Add eggs and milk. Blend well. Pour into bowl and add spinach. Pour into baked pastry shell or greased 9-inch pie pan. Bake at 325 degrees for 35 to 40 minutes or until knife inserted in center comes clean. Let stand 10 minutes. Serves 6.

This "art" car is in our neighborhood on our usual dog walking route. It is always blocking the sidewalk which always makes me want to kick it, but I don't think the owner would notice as there is so much crap on it. She recently added the colorful balls on the hood- she is a nut job and I will be featuring her house at a later date.

Carl's Birthday today! We went to Kinfolk's for beer and music and then to the Loop for dinner. Thanks to Phoebe I have a picture- I keep forgetting my camera at the worst times!
